Vegan | Super Quick and Easy Ramen Recipe

So, I am pretty new to the world of Ramen, but it has always been one of my boyfriends favourite and he will always get it whenever we go out to eat.

Somehow though between us we had never made it at home. That was until I had ingredients for a stir fry all ready to go, but no sauce, or ingredients in which I could really make a sauce. So I thought on my toes and created an incredible Ramen, which I think will become a staple in our house.

So what do you need, I like to keep this super simple so it can be done to your tastes and still be really easy.

  • A protein of your choice- I like to use tofu

  • Cornflour/flour if using tofu

  • Stir fry vegetable kit

  • Mushrooms - I add these in if not already in the stir fry kit

  • Ginger - fresh is better

  • Garlic

  • Fresh chilli - as much or as little as you like! I like mine spicy :)

  • Spring onion

  • Veggie stock cube/broth ( I like to use the no chicken base but no need to buy this especially any vegan stock will do)

  • Chinese 5 Spice

  • Soy sauce

  • Noodles, I like rice noodles personally

Method

  • In a little oil or fry light saute the chilli, garlic, ginger and spring onions gently. Make sure you leave a little bit of spring onion, and chillis to garnish if you wish!

  • Next, add in your veggie stock, and mix in a teaspoon of chinese 5 spice. I find different brands of 5 spice vary in strength, so add a little first and build it up. I also like to add a few shakes of soy sauce in there too.

  • If you are adding a protein into the broth, do so now, so for instance vegan chicken. For my tofu, I take a separate pan and heat some oil. Cut the tofu into cubes and then pat dry with kitchen roll. Dust the tofu in a mix of either cornflour, or flour, with a sprinkling of the Chinese 5 spice mixed in. Fry gently until golden brown. I prefer to fry my tofu slower on a lower heat, and I find it catches quite easily.

  • Once you are happy with the flavour of the broth, add in your veggies, and cook for a couple of minutes until they start to soften.

  • Then add in your rice noodles and continue to cook for the amount of time stated on the packet.

  • Now you’re ready to plate up. Grab a bowl and start with some of your veggies and noodle and then top of your broth. Then if using Tofu, place this on top of your veggies, and garnish with some spring onion and fresh chillis (optional) and youre ready to enjoy!
